My Japanese teacher has recently started collecting recipes for a cookbook she would like to publish, aimed towards foreigners. She wants to be able to teach others about authentic Japanese cuisine, with the goal of one day teaching cooking classes internationally.
How many of you have foreign cookbooks on your shelves? And how many of them do you think are actually authentic, home-style recipes? I for one can barely flip through a "sushi guide" in the bookstore without seeing ingredients that aren't even sold in grocery stores in Japan! Admittedly, some Asian ingredients are hard to come by in America.
